It didn’t matter what season it was or what kind of week we’d had—we always gathered around the table for hamburgers. During the summer, we’d decide which fresh salads or garden vegetables would go with them, and somehow those simple meals became some of my favorite memories.

I never outgrew that Saturday night burger tradition. It found its way to my own family table, and now I enjoy giving those classic burgers a fresh Mediterranean twist with bright lemon, fragrant herbs, creamy feta, and plenty of fresh vegetables.

🍔 Greek Lemon Herb Burgers

Makes: 4 burgers

Ingredients

Burgers

* 1½ pounds lean ground beef (90/10)

* 2 teaspoons dried oregano

* 1 teaspoon dried parsley

* 1 teaspoon garlic powder

* ½ teaspoon onion powder

* 1 teaspoon lemon zest

* 1 tablespoon fresh lemon juice

* 1 tablespoon extra-virgin olive oil

* ½ teaspoon freshly ground black pepper

* ½ teaspoon kosher salt (or to taste)

Creamy Lemon Feta Sauce

* ½ cup plain nonfat Greek yogurt

* ¼ cup crumbled feta cheese

* 1 tablespoon fresh lemon juice

* 1 teaspoon lemon zest

* 1 teaspoon chopped fresh dill (or ½ teaspoon dried dill)

* ½ teaspoon dried oregano

* Freshly ground black pepper to taste

For Serving

* 4 whole wheat or brioche buns

* Baby spinach or romaine lettuce

* Sliced tomato

* Thin slices of English cucumber

* Thin slices of red onion (optional)

Directions

1. In a large bowl, gently combine all of the burger ingredients until just mixed. Do not overwork the meat.

2. Shape into four equal patties and press a slight indentation into the center of each.

3. Refrigerate the patties for about 20 minutes while preparing the sauce.

4. Stir together all of the sauce ingredients until smooth and creamy. Refrigerate until ready to serve.

5. Grill the burgers over medium-high heat for about 4–5 minutes per side, or until they reach an internal temperature of 160°F.

6. Lightly toast the buns.

7. Spread the creamy lemon feta sauce on both halves of each bun. Add lettuce, the burger, tomato, cucumber, and red onion if desired. Serve immediately.
