There’s something about the smell of ripe peaches that feels like summer in a bowl. These Peach Cobbler Overnight Oats have all the cozy flavors of a peach cobbler but in a wholesome breakfast that’s ready when you wake up. The oats soften overnight while the peaches, cinnamon, vanilla, and toasted pecans create a breakfast that’s hearty, refreshing, and just sweet enough.
Perfect for busy mornings, and even better enjoyed with a quiet cup of coffee or tea.
🍑 Ingredients
* ½ cup old-fashioned rolled oats
* ½ cup unsweetened almond milk (or milk of choice)
* ¼ cup plain nonfat Greek yogurt
* ½ fresh peach, diced
* 1 tablespoon chopped pecans
* 1 teaspoon chia seeds
* ½ teaspoon vanilla extract
* ½ teaspoon ground cinnamon
* Pinch of nutmeg
* 1 teaspoon honey (optional)
* Tiny pinch of salt (optional)
Optional Toppings
* Extra diced peaches
* Toasted pecans
* Light sprinkle of cinnamon
🌿 Directions
1. Add all ingredients to a pint-size mason jar.
2. Stir well until everything is evenly combined.
3. Cover and refrigerate overnight (at least 6 hours).
4. In the morning, stir again and top with extra peaches, pecans, and a sprinkle of cinnamon before serving.
Makes 1 serving.

🍑 A Little Rosemary Thyme Tip
If your peaches are especially ripe, they’ll naturally sweeten the oats, so you may find you don’t need any honey at all. This recipe is also delicious made the night before using peaches you’ve frozen from summer.
