Rosemary Thyme “Poor Man’s Steak”
(Herb-Seared Beef Patties with Pan Gravy)
There was a time when steak simply wasn’t something we bought.
When we were first married, we shopped carefully—very carefully.
Aldi was part of that rhythm even back then… and I still remember that in those early days, they didn’t even carry fresh ground beef.
It was the frozen tubes in the freezer section.
And we made them work.
And somehow, in those early years, we learned that you could take something simple—ground beef, a few seasonings, a little time at the stove—and turn it into something that felt like a real dinner… something that sat on the plate like a steak, even if it wasn’t.
We used to smile and call it “poor man’s steak.”
And truthfully… it never felt like we were missing anything.
Because it wasn’t just about what was on the plate—
it was about building a home, one careful meal at a time.

Ingredients
For the beef patties:
* 1 lb 93% lean ground beef
* 1 egg
* 1/4 cup finely diced onion
* 2 tbsp milk
* 1/4 cup breadcrumbs (optional)
Seasoning:
* 1 tsp paprika
* 1 tsp garlic powder
* 1 tsp onion powder
* 1/2 tsp dried thyme
* 1/2 tsp dried rosemary, lightly crushed
* 1/2 tsp black pepper

For the pan gravy:
* 1 tbsp butter
* 1 small onion, thinly sliced
* 1 tbsp flour
* 1 1/2 cups low-sodium beef broth
* 1 tsp Worcestershire sauce
* Black pepper to taste

Instructions
1. In a bowl, gently mix all patty ingredients until just combined. Form into oval steak-style patties.
2. Heat a cast-iron skillet with a little oil. Sear patties 4–5 minutes per side until nicely browned. Remove and set aside.
3. In the same skillet, add butter and sliced onions. Cook until soft and golden.
4. Stir in flour and cook for 1 minute.
5. Slowly whisk in beef broth, then add Worcestershire and pepper. Let the gravy thicken.
6. Return patties to the skillet, spoon gravy over, cover, and simmer about 10 minutes.
