Ingredients

• 2 cod fillets (5–6 ounces each)

• 2 tablespoons extra-virgin olive oil

• ½ small onion, finely diced

• 3 cloves garlic, minced

• 2 cups chopped fresh tomatoes (or one 14-ounce can no-salt diced tomatoes)

• ¼ cup sliced Kalamata olives

• 1 tablespoon capers, rinsed

• ½ teaspoon dried oregano

• ¼ teaspoon dried thyme

• Salt and freshly ground black pepper, to taste

• Zest of ½ lemon

• Juice of ½ lemon

• Fresh basil

• Fresh parsley

• 1 tablespoon finely sliced fresh lemon balm

• Lemon wedges for serving

Directions

1. Heat the olive oil in a cast-iron skillet over medium heat.

2. Cook the onion until softened, about 5 minutes.

3. Stir in the garlic and cook for 30 seconds.

4. Add the tomatoes, olives, capers, oregano, thyme, and lemon zest. Simmer for 10–15 minutes until slightly thickened.

5. Season the cod with salt and pepper and nestle the fillets into the sauce.

6. Cover and cook gently for 8–12 minutes, or until the fish flakes easily with a fork.

7. Stir together the basil, parsley, and fresh lemon balm. Sprinkle over the fish just before serving.
