It’s warm, hearty, a little messy in the best wayβ€”and filled with those simple, comforting flavors that make a home feel full.

Poor Man’s Steak

πŸ₯©βœ¨ Rosemary Thyme β€œPoor Man’s Steak”

(Herb-Seared Beef Patties with Pan Gravy)

There was a time when steak simply wasn’t something we bought.

When we were first married, we shopped carefullyβ€”very carefully.

Aldi was part of that rhythm even back then… and I still remember that in those early days, they didn’t even carry fresh ground beef.

It was the frozen tubes in the freezer section.

And we made them work.

And somehow, in those early years, we learned that you could take something simpleβ€”ground beef, a few seasonings, a little time at the stoveβ€”and turn it into something that felt like a real dinner… something that sat on the plate like a steak, even if it wasn’t.

We used to smile and call it β€œpoor man’s steak.”

And truthfully… it never felt like we were missing anything.

Because it wasn’t just about what was on the plateβ€”

it was about building a home, one careful meal at a time.

─────────────────────

🧺 Ingredients

For the beef patties:

* 1 lb 93% lean ground beef

* 1 egg

* 1/4 cup finely diced onion

* 2 tbsp milk

* 1/4 cup breadcrumbs (optional)

Seasoning:

* 1 tsp paprika

* 1 tsp garlic powder

* 1 tsp onion powder

* 1/2 tsp dried thyme

* 1/2 tsp dried rosemary, lightly crushed

* 1/2 tsp black pepper

βΈ»

For the pan gravy:

* 1 tbsp butter

* 1 small onion, thinly sliced

* 1 tbsp flour

* 1 1/2 cups low-sodium beef broth

* 1 tsp Worcestershire sauce

* Black pepper to taste

─────────────────────

🍳 Instructions

1. In a bowl, gently mix all patty ingredients until just combined. Form into oval steak-style patties.

2. Heat a cast-iron skillet with a little oil. Sear patties 4–5 minutes per side until nicely browned. Remove and set aside.

3. In the same skillet, add butter and sliced onions. Cook until soft and golden.

4. Stir in flour and cook for 1 minute.

5. Slowly whisk in beef broth, then add Worcestershire and pepper. Let the gravy thicken.

6. Return patties to the skillet, spoon gravy over, cover, and simmer about 10 minutes.

🍽️ Serving Ideas

Serve alongside your creamy garlic Parmesan potatoes, letting just a little of that savory gravy drift toward them.

Slow Cooker Corned Beef

πŸ€πŸ₯© Rosemary Thyme Slow Cooker Corned Beef

Guinness NA β€’ Tender β€’ Classic Comfort

Corned beef and cabbage with carrots and potatoes, alongside warm Irish soda bread, has been one of our family’s St. Patrick’s Day traditions for many years. πŸ’›

In the early days, I always made it the way so many of us learned β€” simmering on the stove for hours and hours. Then one year I looked over at my crockpot and thought… I bet this would work just as well β€” maybe even better.

Well, it turns out… it does. 🌿

Slow cooking the corned beef makes it beautifully tender and full of that cozy, savory flavor we all love.

And the funny thing is β€” every single year when we sit down to this meal, someone at the table says:

β€œWhy don’t we make this more than once a year? It’s so delicious.”

Some traditions are just too good to keep only once a year. πŸ’›

─────────────────────

πŸ₯© Ingredients

β€’ 1 flat-cut corned beef brisket (about 3–4 pounds), with spice packet

β€’ 1 (12 oz) Guinness Non-Alcoholic beer

β€’ 1 cup water or low-sodium beef broth

β€’ 1-2 tablespoons Worcestershire Sauce

β€’ Β½ medium sweet onion, thick sliced

β€’ 2 cloves garlic, lightly crushed

β€’ 1 large carrot, cut into chunks

β€’ Β½ teaspoon black pepper

β€’ 1 tablespoon brown sugar (added to the last hour of slow cooking directly to the broth, NOT on top of meat)

Optional gentle flavor boost (choose one if desired):

β€’ 1–2 teaspoons apple cider vinegar or

β€’ Β½ teaspoon mustard seeds

🌿If you get your meat from the butcher like I do, it may not come with the package of spices. Below is a list of ground spices that you can use in place of the spice packet.

Crockpot Corned Beef Spice Blend

(for about a 3–4 lb corned beef)

β€’ 1 teaspoon ground coriander

β€’ 1/2 teaspoon ground allspice

β€’ 1/4 teaspoon ground ginger

β€’ 1/8 teaspoon ground cinnamon

β€’ 1/8 teaspoon ground cloves (a little goes a long way)

β€’ 1 teaspoon dry mustard powder

β€’ 1/2 teaspoon black pepper

(Mix spices together in a small bowl)

β€’ 2 bay leaves (if you have them)

How to use

1. Place the corned beef in the crockpot fat side up.

2. Sprinkle the spice mixture over the top.

3. Add beef broth and a little butter (that’s a lovely idea).

4. Toss in the onion, garlic, and bay leaves.

5. Cook low 8–9 hours until tender.

About the juniper berries

They add a piney note, but honestly they’re not essential. The coriander, mustard, and allspice carry most of the classic corned-beef flavor.

─────────────────────

✨ Instructions

1. Prepare the brisket

Remove corned beef from packaging. If desired, rinse briefly under cool water and pat dry to reduce excess surface salt. Place into slow cooker fat side up and sprinkle the included spice packet over the top.

2. Build the flavor base

Add onion, garlic, carrot, and bay leaf around the brisket. Pour in Guinness NA and water or broth so liquid comes about halfway up the meat. Add optional vinegar or mustard seeds if using.

3. Slow cook

Cook on LOW for 8–9 hours (preferred) or HIGH for 4–5 hours, until fork-tender but still sliceable.

4. Rest and slice

Remove to a cutting board and rest 10 minutes. Slice against the grain for best tenderness.

─────────────────────

🌿 Rosemary Thyme Kitchen Notes

β€’ Flat-cut brisket gives the prettiest slices

β€’ Guinness NA adds deep malty richness

β€’ Gentle rinsing helps control sodium

β€’ I prefer to prepare potatoes and cabbage separately for the best texture and balanced flavor

Savory Garden Beef Skillet

🌿 Savory Garden Beef Skillet

There are some meals that don’t need fancy ingredients or complicated techniques to become family favorites. This Savory Garden Beef Skillet is one of those recipes.

I wanted to create a healthier version of the classic sloppy joe filling without relying on packaged seasoning mixes or lots of added salt. Fresh onions, peppers, garlic, tomatoes, and a blend of warm spices come together to make a rich, savory skillet meal that’s full of flavor.

One of my favorite ways to serve it is piled high on toasted sprouted grain bread, but it’s just as delicious over baked potatoes, brown rice, or even spooned into bell peppers for a hearty dinner.

Simple ingredients, wholesome flavor, and comfort food the whole family can enjoyβ€”that’s exactly what Rosemary Thyme is all about.

πŸ₯© Ingredients

* 1 pound 93% lean grass-fed ground beef

* 1 tablespoon olive oil

* 1 onion, finely diced

* 1 red bell pepper, diced

* 1 green bell pepper, diced

* 3 cloves garlic, minced

* 1 can low-sodium tomato paste

* Β½ cup unsalted broth

* 1 tablespoon apple cider vinegar

* 1 tablespoon low-sodium Worcestershire sauce

* 1–2 teaspoons smoked paprika

* 1 teaspoon ground cumin

* Β½ teaspoon chili powder

* Β½ teaspoon mustard powder

* β…› teaspoon cinnamon

* Freshly ground black pepper to taste

Optional: Stir in 1 tablespoon date paste or a small amount of grated apple for a touch of natural sweetness.

πŸ‘©β€πŸ³ Directions

1. Brown the ground beef in a large skillet. Drain excess fat if needed.

2. Add the olive oil, onion, bell peppers, and garlic. Cook until the vegetables are tender.

3. Stir in the tomato paste and all of the seasonings.

4. Add the broth and mix well until everything is combined.

5. Stir in the apple cider vinegar and Worcestershire sauce.

6. Reduce the heat and simmer for 10–15 minutes, stirring occasionally, until thick and flavorful.

7. Serve over toasted sprouted grain bread, baked potatoes, rice, or your favorite whole-grain rolls.

🌿 Rosemary Thyme Tips

βœ”οΈ Double the recipe and freeze half for an easy weeknight meal.

βœ”οΈ Leftovers make a wonderful filling for stuffed peppers or baked sweet potatoes.

βœ”οΈ Add mushrooms or zucchini for even more garden goodness.

βΈ»

πŸ’¬ I’d love to know…

How would you serve this? On toasted bread, over a baked potato, on rice, or do you have another family favorite?

🌿 Cooking from the garden…one simple meal at a time.

Have a peaceful and blessed day.
