There’s something special about gathering around warm sizzling food, the comforting smell of garlic and ginger, and simply being together around the table.

This slow cooker version brings a little bit of that cozy hibachi-style flavor home, but prepared in a gentler lower-sodium style using rich broth, garlic, ginger, sesame oil, and simple ingredients from home.

Ingredients

* 1Β½ lbs stew beef, cut into bite-size pieces

* 3 cups broccoli florets

* 1 small onion, thinly sliced

* 3 cloves garlic, minced

* 1 tbsp fresh grated ginger (or 1/2 tsp ground ginger)

* 1Β½ cups no-salt-added beef broth

* 1 tbsp balsamic vinegar

* 1 tsp molasses or honey

* 1 tsp toasted sesame oil

* 1 tbsp avocado oil

* 1/2 tsp onion powder

* Black pepper to taste

Optional Thickener

* 1 tbsp cornstarch

* 2 tbsp cold water

Instructions

1. Add stew beef, onion, garlic, and ginger to the slow cooker.

2. Pour in:

* beef broth

* balsamic vinegar

* molasses or honey

* avocado oil

3. Add onion powder and black pepper.

4. Stir gently to combine.

5. Cover and cook:

* LOW for 7–8 hours

   or

* HIGH for 4–5 hours

until the beef becomes tender.

6. During the last 20–30 minutes of cooking, stir in the broccoli florets.

7. For a thicker sauce, whisk together cornstarch and cold water, stir into the slow cooker, and cook an additional 10–15 minutes with the lid slightly open.

8. Stir in toasted sesame oil just before serving.

In the early days, I always made it the way so many of us learned β€” simmering on the stove for hours and hours. Then one year I looked over at my crockpot and thought… I bet this would work just as well β€” maybe even better.

Well, it turns out… it does. 🌿

Slow cooking the corned beef makes it beautifully tender and full of that cozy, savory flavor we all love.

And the funny thing is β€” every single year when we sit down to this meal, someone at the table says:

β€’ 1 flat-cut corned beef brisket (about 3–4 pounds), with spice packet

β€’ 1 (12 oz) Guinness Non-Alcoholic beer

β€’ 1 cup water or low-sodium beef broth

β€’ Β½ medium sweet onion, thick sliced

β€’ 2 cloves garlic, lightly crushed

β€’ 1 large carrot, cut into chunks

β€’ Β½ teaspoon black pepper

β€’ 1 tablespoon brown sugar (added to the last hour of slow cooking directly to the broth, NOT on top of meat)

Optional gentle flavor boost (choose one if desired):

🌿If you get your meat from the butcher like I do, it may not come with the package of spices. Below is a list of ground spices that you can use in place of the spice packet.

Crockpot Corned Beef Spice Blend

(for about a 3–4 lb corned beef)

β€’ 1 teaspoon ground coriander

β€’ 1/2 teaspoon ground allspice

β€’ 1/4 teaspoon ground ginger

β€’ 1/8 teaspoon ground cinnamon

β€’ 1/8 teaspoon ground cloves (a little goes a long way)

β€’ 1 teaspoon dry mustard powder

β€’ 1/2 teaspoon black pepper

(Mix spices together in a small bowl)

β€’ 2 bay leaves (if you have them)

How to use

1. Place the corned beef in the crockpot fat side up.

2. Sprinkle the spice mixture over the top.

3. Add beef broth and a little butter (that’s a lovely idea).

4. Toss in the onion, garlic, and bay leaves.

5. Cook low 8–9 hours until tender.

About the juniper berries

They add a piney note, but honestly they’re not essential. The coriander, mustard, and allspice carry most of the classic corned-beef flavor.

1. Prepare the brisket

Remove corned beef from packaging. If desired, rinse briefly under cool water and pat dry to reduce excess surface salt. Place into slow cooker fat side up and sprinkle the included spice packet over the top.

2. Build the flavor base

Add onion, garlic, carrot, and bay leaf around the brisket. Pour in Guinness NA and water or broth so liquid comes about halfway up the meat. Add optional vinegar or mustard seeds if using.

3. Slow cook

4. Rest and slice

The tomato harvest has officially made its way from the garden to the kitchen! πŸ…

After watching trays of garden tomatoes slowly ripening on the Rosemary Thyme Table, I knew some of them were destined for a pot of homemade tomato soup.

This version is simple, wholesome and made without cream. Roasting the tomatoes first brings out their natural sweetness, while carrots add a little extra body and help balance the acidity. I use no-salt-added chicken broth so I can control the sodium, too.

And since Dennis avoids onion and garlic, I can simply leave those out. There is still plenty of wonderful flavor from the roasted tomatoes and herbs. 🌿

Roasted Garden Tomato Soup

Ingredients
β€’ 3 lbs ripe garden tomatoes, quartered
β€’ 2 tbsp extra-virgin olive oil
β€’ 2 medium carrots, sliced
β€’ 1 medium onion, chopped β€” optional
β€’ 3–4 garlic cloves β€” optional
β€’ 2 cups no-salt-added chicken broth, plus more if needed
β€’ 1 tsp dried basil or 1 tbsp fresh basil
β€’ 1 tsp dried thyme or several fresh thyme sprigs
β€’ Β½ tsp dried oregano β€” optional
β€’ ΒΌ tsp black pepper
β€’ 1 tsp honey or preferred sweetener β€” optional
β€’ 1–2 tsp fresh lemon juice
β€’ Salt, only if desired after tasting

Directions

1. Roast the vegetables.
Heat oven to 425Β°F. Place tomatoes and carrots on a large rimmed baking sheet along with the onion and garlic, if using. Drizzle with olive oil and toss gently.

Roast for 35–45 minutes, until the tomatoes have collapsed and the edges begin to caramelize. Save every bit of those wonderful juices!

2. Simmer.
Transfer the roasted vegetables and juices to a soup pot. Add 2 cups chicken broth, basil, thyme, oregano and black pepper.

Simmer gently for about 15 minutes.

3. Blend.
Puree with an immersion blender until smooth. Add a little additional broth if you’d like a thinner soup.

4. Finish.
Stir in the fresh lemon juice and taste. If your tomatoes are particularly tart, add just a little honey or sweetener to round out the flavor.

A cold front moved through yesterday, and this morning the sky was cloudy and gray with that unmistakable coolness in the air. The very first thing I thought of was soup.

I opened my freezer to see what I had on hand and found bags of carrots, sweet potatoes, and butternut squash waiting to be used. With a carton of unsalted chicken broth in the pantry and a few herbs from the spice cabinet, a pot of soup was soon simmering away in the slow cooker.

There is something comforting about using simple ingredients you already have and turning them into something warm and nourishing. As the soup cooked, the house filled with the cozy aroma of sweet vegetables, thyme, and ginger. By lunchtime, it had become the most delicious bowl of creamy soupβ€”perfect for a cool day at home.

Sometimes the best meals aren’t the ones we plan. They’re the ones that come together from what we already have, with a little creativity and a grateful heart.

🍲 Slow Cooker Creamy Carrot, Sweet Potato & Butternut Squash Soup

Ingredients

β€’ 1 bag frozen butternut squash (about 3–4 cups)

β€’ 1 bag frozen sweet potatoes (about 3–4 cups)

β€’ 1 carton (32 oz) unsalted chicken broth

I cook soups all year round. Since most of my soups are made in the slow cooker, I don’t have to worry about heating up the kitchen, even during the summer months. They’re also one of my favorite ways to add extra vegetables to our meals.

This soup combines tender chicken meatballs, kale, spinach, carrots, celery, and just enough couscous to make it hearty without being heavy. A squeeze of fresh lemon at the end brightens the entire pot and gives it a fresh garden flavor.

🍲 Slow Cooker Couscous Chicken Meatball Soup

Chicken Meatballs:

β€’ 1 pound ground chicken

β€’ 2 teaspoons dried basil

β€’ 1 teaspoon dried oregano

β€’ ΒΌ teaspoon black pepper

β€’ ΒΌ teaspoon garlic powder

β€’ 1 egg

β€’ ΒΌ cup seasoned breadcrumbs

Soup:

β€’ 1 large onion, finely chopped

β€’ 2 teaspoons olive oil

β€’ 2 cartons no-sodium chicken stock (about 8 cups)

β€’ 1Β½ cups diced carrots

β€’ 1Β½ cups diced celery

β€’ 4 cups chopped kale

Finish:

4. Add the onion, olive oil, chicken stock, carrots, celery, kale, and pepper.

5. Cook on Low for 4 hours.

6. During the last 20–30 minutes of cooking, stir in the spinach and couscous.

7. Continue cooking until the couscous is tender and the spinach is wilted.

8. Stir in the lemon juice just before serving and adjust seasonings to taste.

Tomorrow our son will be out with friends enjoying a new hot chicken restaurant that recently opened nearby. It seems those places are becoming more popular every day, and I’m sure he’ll have a wonderful time.

Meanwhile, here at home, the weather forecast is calling for rain and cooler temperatures.

So instead of a more elaborate Sunday dinner, Dennis and I will be enjoying something simple and comforting: a pot of Rosemary Thyme Corn & Butter Bean Chowder simmering on the stove.

There was a time when Sundays were filled with children’s schedules, busy kitchens, extra chairs around the table, and the wonderful noise of family life.

Now our Sundays are quieter.

And while I sometimes miss those busy years, I’ve also come to appreciate the blessings of this season.

A rainy afternoon.

A warm pot of soup.

A loaf of sourdough bread.

Conversation across the table.

The comfort of being with someone you’ve shared decades of life with.

4️⃣ Bring to a gentle boil, reduce heat, and simmer for 20–25 minutes.

5️⃣ Remove the bay leaf.

6️⃣ Use an immersion blender to partially blend about one-third of the soup for a creamy chowder texture while leaving plenty of beans and corn intact.

7️⃣ Stir in half-and-half and lemon juice. Heat gently without boiling.

8️⃣ Serve with toasted sourdough bread and a sprinkle of fresh parsley or chives if desired.
