Mediterranean Salmon Loaf with Creamy Cucumber Dill Sauce

Mediterranean Salmon Loaf with Creamy Cucumber Dill Sauce

Inspired by My Mother’s Salmon Burgers

There are some recipes that stay with you for a lifetime. My mother made wonderful salmon burgers, and they were always one of those simple, comforting meals that brought everyone to the table. As I planned this recipe, I found myself thinking about those family dinners and wondering how I could give one of her favorites a fresh Mediterranean twist.

By adding sweet onions sautéed in olive oil, juicy cherry tomatoes, tangy feta cheese, Kalamata olives, fresh dill, parsley, and bright lemon, this classic becomes something both familiar and new. Instead of serving it with a traditional tartar sauce, I paired it with a light and refreshing cucumber dill sauce made with low-fat Greek yogurt. It complements the salmon beautifully without overpowering it.

This is the kind of meal I love sharing at the Rosemary Thyme Table—simple pantry ingredients transformed into something wholesome, flavorful, and special enough to gather family around.

* 4 (5-ounce) cans wild-caught salmon, drained

* 1 large sweet onion, finely diced

* 1 tablespoon extra-virgin olive oil

* 1 cup whole wheat panko breadcrumbs

* 2 large eggs

* ½ cup crumbled feta cheese

* 1 cup cherry or grape tomatoes, quartered and lightly seeded

* ¼ cup finely chopped Kalamata olives

* ¼ cup fresh parsley, chopped

* 3 tablespoons fresh dill, chopped

* 1 teaspoon Dijon mustard

* Salt only if needed

Directions

1. Preheat the oven to 350°F. Lightly grease a 9 x 5-inch loaf pan.

2. Heat the olive oil in a skillet over medium heat. Add the diced sweet onion and cook until softened and lightly golden, about 8–10 minutes. Remove from the heat and allow to cool slightly.

3. In a large mixing bowl, combine the salmon, sautéed onion, whole wheat panko, eggs, feta cheese, tomatoes, Kalamata olives, parsley, dill, lemon juice, lemon zest, Dijon mustard, oregano, smoked paprika, and black pepper.

4. Mix gently until just combined. If the mixture seems too wet, add another tablespoon or two of whole wheat panko.

5. Transfer the mixture to the prepared loaf pan and gently shape the top.

6. Bake for 45–55 minutes, or until the loaf is lightly golden and reaches an internal temperature of 145°F.

7. Let the loaf rest for 10 minutes before slicing.

Slow Cooker Cubed Steak with Creamy Onion Sauce

Slow Cooker Cubed Steak with Creamy Onion Sauce 🌿

There was a time when many slow cooker cubed steak recipes started with a can of soup and a seasoning packet. They were easy, affordable, and helped many families get supper on the table after a long day.

Lately, I’ve found myself looking for ways to make some of those familiar comfort foods with ingredients I already keep in my kitchen. This version uses sweet onions, beef broth, Greek yogurt, and our Rosemary Thyme Herb Blend to create a creamy, savory sauce that tastes like it simmered all day—because it did.

The cubed steak becomes fork-tender, the onions melt into the sauce, and a handful of broccoli added near the end brings a little color and freshness to the meal. Served over brown rice, it’s the kind of supper that feels like home.

✨ RECIPE ✨

Ingredients

• 2 pounds cubed steak

• 1 large sweet onion, sliced

• ¾ cup unsalted beef broth

• 1 tablespoon Worcestershire sauce

• 1 teaspoon Rosemary Thyme Herb Blend

• 2 cups broccoli florets, cut into bite-sized pieces

Creamy Finish

• 1 cup plain Greek yogurt

• 2 tablespoons cornstarch

• 2 tablespoons cold water

Instructions

1. Layer the sliced onions in the bottom of a slow cooker.

2. Place the cubed steak over the onions.

3. Whisk together the beef broth, Worcestershire sauce, and Rosemary Thyme Herb Blend. Pour over the steak.

4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.

5. During the last 30–45 minutes of cooking, add the broccoli florets.

6. Mix the cornstarch and cold water to make a slurry. Stir into the cooking liquid and allow the sauce to thicken slightly.

7. Place the Greek yogurt in a bowl. Slowly whisk in about ½ cup of the hot cooking liquid to temper the yogurt.

8. Stir the yogurt mixture into the slow cooker and heat gently for 15–20 minutes. Do not boil.

9. Serve over cooked brown rice.

🌿 Kitchen Note

Many traditional slow cooker cubed steak recipes rely on canned soups and seasoning packets for flavor. This version takes a different path, using real ingredients to create a creamy sauce while keeping the sodium a little lower and the ingredient list a little simpler. At Rosemary Thyme, we believe small changes made one meal at a time can help create a healthier kitchen without giving up the comfort foods we love.

Famous Barr John White Burger

🍔 St. Louis Table — Famous-Barr John White Burger

Before online shopping carts and curbside pickup…

there were Eagle Stamps.

All summer long I would sit at the table pasting those tiny stamps into the books — page after page — while my mom saved them carefully in a drawer. When the books were filled, we would go downtown to Famous-Barr to redeem them. But the real treat wasn’t what we brought home…

It was lunch together.

We would walk into the Famous-Barr Café, sit down like ladies out for the day, and I always hoped for the same thing — the John White Burger. It didn’t taste like any other burger. No lettuce, no tomato… just a warm bun, a juicy patty, sweet onions, and that unforgettable creamy cheese sauce poured right over the top.

It felt special every single time.

Today I’m sharing a faithful recreation so a St. Louis favorite can live on at our tables.

Ingredients

Rarebit Cheese Sauce

• 6 oz deli American cheese, chopped

• ¾ cup half-and-half

• 1 tsp Worcestershire sauce

• ½ tsp dry mustard

• Pinch black pepper

Signature Onions

• 1 large sweet onion, very thinly sliced

• Neutral oil for shallow frying

• Pinch salt

Burgers

• 1 lb ground beef (80–85%)

• Salt & pepper

• 4 soft hamburger buns

─────────────────────

Instructions

 1. Make the sauce

In a small saucepan over low heat combine half-and-half and cheese. Stir gently until smooth. Add Worcestershire, mustard, and pepper. Keep warm — do not boil.

 2. Fry the onions

Heat about ½ inch oil in a skillet over medium. Cook onions in batches until soft and pale golden, not brown. Drain and lightly salt.

 3. Cook the burgers

Season patties with salt and pepper and cook in a cast-iron skillet or griddle. Toast buns lightly in the drippings.

 4. Assemble

Bottom bun → burger → generous onions → ladle of cheese sauce → top bun

Serve immediately while hot and cozy.

Kitchen Note

This is not a backyard burger — it’s a café sandwich. The warm rarebit sauce is what makes it the Famous-Barr classic.
