Slow Cooker Cubed Steak with Creamy Onion Sauce 🌿

Lately, I’ve found myself looking for ways to make some of those familiar comfort foods with ingredients I already keep in my kitchen. This version uses sweet onions, beef broth, Greek yogurt, and our Rosemary Thyme Herb Blend to create a creamy, savory sauce that tastes like it simmered all dayβ€”because it did.

The cubed steak becomes fork-tender, the onions melt into the sauce, and a handful of broccoli added near the end brings a little color and freshness to the meal. Served over brown rice, it’s the kind of supper that feels like home.

Ingredients

β€’ 2 pounds cubed steak

β€’ 1 large sweet onion, sliced

β€’ ΒΎ cup unsalted beef broth

β€’ 1 tablespoon Worcestershire sauce

β€’ 1 teaspoon Rosemary Thyme Herb Blend

β€’ 2 cups broccoli florets, cut into bite-sized pieces

Creamy Finish

β€’ 1 cup plain Greek yogurt

β€’ 2 tablespoons cornstarch

β€’ 2 tablespoons cold water

Instructions

1. Layer the sliced onions in the bottom of a slow cooker.

2. Place the cubed steak over the onions.

3. Whisk together the beef broth, Worcestershire sauce, and Rosemary Thyme Herb Blend. Pour over the steak.

4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.

5. During the last 30–45 minutes of cooking, add the broccoli florets.

6. Mix the cornstarch and cold water to make a slurry. Stir into the cooking liquid and allow the sauce to thicken slightly.

7. Place the Greek yogurt in a bowl. Slowly whisk in about Β½ cup of the hot cooking liquid to temper the yogurt.

8. Stir the yogurt mixture into the slow cooker and heat gently for 15–20 minutes. Do not boil.

9. Serve over cooked brown rice.

All summer long I would sit at the table pasting those tiny stamps into the books β€” page after page β€” while my mom saved them carefully in a drawer. When the books were filled, we would go downtown to Famous-Barr to redeem them. But the real treat wasn’t what we brought home…

It was lunch together.

We would walk into the Famous-Barr CafΓ©, sit down like ladies out for the day, and I always hoped for the same thing β€” the John White Burger. It didn’t taste like any other burger. No lettuce, no tomato… just a warm bun, a juicy patty, sweet onions, and that unforgettable creamy cheese sauce poured right over the top.

It felt special every single time.

Today I’m sharing a faithful recreation so a St. Louis favorite can live on at our tables.

Ingredients

Rarebit Cheese Sauce

β€’ 6 oz deli American cheese, chopped

β€’ ΒΎ cup half-and-half

β€’ 1 tsp Worcestershire sauce

β€’ Β½ tsp dry mustard

β€’ Pinch black pepper

Signature Onions

β€’ 1 large sweet onion, very thinly sliced

β€’ Neutral oil for shallow frying

β€’ Pinch salt

Burgers

β€’ 1 lb ground beef (80–85%)

β€’ Salt & pepper

β€’ 4 soft hamburger buns

Instructions

 1. Make the sauce

In a small saucepan over low heat combine half-and-half and cheese. Stir gently until smooth. Add Worcestershire, mustard, and pepper. Keep warm β€” do not boil.

 2. Fry the onions

Heat about Β½ inch oil in a skillet over medium. Cook onions in batches until soft and pale golden, not brown. Drain and lightly salt.

 3. Cook the burgers

Season patties with salt and pepper and cook in a cast-iron skillet or griddle. Toast buns lightly in the drippings.

 4. Assemble

Bottom bun β†’ burger β†’ generous onions β†’ ladle of cheese sauce β†’ top bun

Serve immediately while hot and cozy.
