🛒 Ingredients

Filling

* 1 (16-ounce) can refried beans

* 1½ cups cooked brown rice

* 2 teaspoons extra-virgin olive oil

* ¼ cup low-sodium vegetable broth

* 2 tablespoons salsa

* 1 teaspoon ground cumin

* 1 teaspoon mild chili powder

* 1 teaspoon smoked paprika

* ½ teaspoon garlic powder

* ½ teaspoon onion powder

* ¼ teaspoon dried oregano

* ½ teaspoon unsweetened cocoa powder

* Juice of ½ fresh lime

* Freshly ground black pepper, to taste

Optional Toppings

* Reduced-fat shredded cheddar or Monterey Jack cheese

* Plain Greek yogurt

* Diced tomatoes

* Shredded lettuce

* Avocado slices

* Fresh cilantro

* Extra salsa

To Serve

* 4 large whole wheat burrito tortillas

* Lime wedges

👩‍🍳 Instructions

1. Heat the olive oil in a large skillet over medium-low heat.

2. Add the refried beans, vegetable broth, and salsa. Stir until smooth and creamy.

3. Mix in the cumin, chili powder, smoked paprika, garlic powder, onion powder, oregano, and cocoa powder.

4. Simmer for 4–5 minutes, stirring often, until the flavors have blended together.

5. Stir in the fresh lime juice and black pepper.

6. Fold the cooked brown rice into the bean mixture until evenly coated.

7. Warm the tortillas.

8. Spoon the filling into each tortilla and add any desired toppings.

9. Fold into burritos.

10. For a lightly crisp exterior, place each burrito seam-side down in a dry skillet over medium heat for 1–2 minutes per side until lightly golden.

The little secret in this recipe is just ½ teaspoon of unsweetened cocoa powder. It doesn’t make the filling taste like chocolate.
