
Rosemary Thyme Spring Breakfast Salad with Eggs & Bacon
A fresh, savory way to begin the day
There’s something about spring mornings that makes me want lighter meals…
but not empty ones.
I still want something warm, something grounding—
something that feels like it will carry me gently into the day.
This breakfast salad has become one of those quiet favorites.
Crisp greens, a simple hard-boiled egg, a little bacon, and a soft lemon vinaigrette that brings everything together.
It’s simple… but it feels like care on a plate.

Ingredients
For the salad:
* 4 cups spring lettuce mix
* 1/2 cup fresh or thawed peas
* 4 slices bacon
* 4 hard-boiled eggs, peeled and halved
* 1/3 cup toasted walnuts
* 2 tbsp chopped chives (optional
)
For the lemon vinaigrette:
* 3 tbsp olive oil
* 1 tbsp fresh lemon juice
* 1 tsp Dijon mustard
* 1/2 tsp honey (optional)
* 1/4 tsp black pepper
* Pinch of salt
* or 1/2 tsp Diamond Crystal kosher salt

Instructions
1. Place eggs in a saucepan, cover with water, and bring to a gentle boil.
2. Once boiling, cover, turn off heat, and let sit for 10–12 minutes. Transfer to cold water, peel, and halve.
3. Cook bacon in a skillet until crisp. Drain and chop.
4. Toast walnuts in a dry skillet over medium heat for 3–5 minutes, until fragrant.
5. In a small bowl or jar, whisk together olive oil, lemon juice, Dijon, honey (if using), pepper, and salt.
6. In a large bowl or on individual plates, layer lettuce, peas, bacon, and walnuts.
7. Top with halved eggs and drizzle with the lemon vinaigrette.
8. Finish with chives and a tiny pinch of fleur de sel if desired.
