There’s something so comforting about a warm, creamy side dish at the family table. 🌽💛 This one brings together sweet corn, tender orzo, and freshly grated Parmesan, with a little thyme and a finishing sprinkle of parsley.

I wanted that creamy comfort with a lighter touch, so this recipe uses fat-free half-and-half and just a tablespoon of butter. A little of the corn is blended into the sauce to give it extra creaminess. It would be a lovely addition to a holiday table or a cozy supper at home!

🌿 Rosemary Thyme Creamy Parmesan Corn & Orzo

Makes: About 6 side servings

🛒 Ingredients

• 1 bag (16 ounces) frozen sweet corn
• ¾ cup dry Barilla orzo pasta
• ½ cup finely diced sweet onion
• 1 tablespoon unsalted butter
• ½ cup Swanson no-salt-added chicken broth, plus extra as needed
• ¾ cup fat-free half-and-half
• ⅓ cup freshly grated Parmesan cheese
• ¼ teaspoon dried thyme
• ¼ teaspoon garlic powder
• ⅛ teaspoon black pepper, or to taste
• 1 tablespoon chopped fresh parsley, for finishing

👩‍🍳 Directions

  1. Cook the orzo according to the package directions, just until tender. Drain and set aside.
  2. Meanwhile, melt the butter in a large skillet over medium-low heat. Add the sweet onion and cook for 5–7 minutes, stirring occasionally, until softened.
  3. Stir in the frozen corn, chicken broth, thyme, garlic powder, and black pepper. Cover and gently simmer for 5–7 minutes, until the corn is hot and tender.
  4. Scoop out about ½ cup of the corn with a little of the cooking liquid. Carefully blend until mostly smooth, then return it to the skillet.
  5. Stir in the fat-free half-and-half and cooked orzo. Heat gently, stirring, until everything is warm and creamy. Avoid a hard boil.
  6. Remove from the heat and stir in the freshly grated Parmesan. Taste and adjust the pepper, then sprinkle the fresh parsley over the top before serving.

🌿 A Little Kitchen Tip

Orzo absorbs sauce as it sits. If needed, stir in a splash of extra broth before serving to keep it creamy. Taste before adding salt—the Parmesan brings its own savory flavor!

Serve alongside roast turkey, chicken, or pork for a comforting meal. 💛
