Thereβs something so comforting about a warm, creamy side dish at the family table. π½π This one brings together sweet corn, tender orzo, and freshly grated Parmesan, with a little thyme and a finishing sprinkle of parsley.
I wanted that creamy comfort with a lighter touch, so this recipe uses fat-free half-and-half and just a tablespoon of butter. A little of the corn is blended into the sauce to give it extra creaminess. It would be a lovely addition to a holiday table or a cozy supper at home!

πΏ A Little Kitchen Tip
Orzo absorbs sauce as it sits. If needed, stir in a splash of extra broth before serving to keep it creamy. Taste before adding saltβthe Parmesan brings its own savory flavor!
