And I found something fun at Walmart β€” Kernel Season’s Butter Flavored Olive Oil. Although it’s marketed for popcorn, I thought, why stop at popcorn? πŸ˜„ It gives us a little buttery flavor while using olive oil as the base.

Ingredients

1 large egg
Liquid egg whites equivalent to 2 large eggs, according to package directions
1 teaspoon butter-flavored olive oil β€” I use Kernel Season’s Butter Flavored Olive Oil from Walmart
Β½ cup fresh spinach, roughly chopped
ΒΌ cup chopped fresh tomato
2 tablespoons crumbled feta cheese
1 tablespoon chopped fresh chives
Freshly ground black pepper, to taste
Pinch of salt, optional β€” feta naturally contains sodium, so taste before adding

Directions

  1. Heat the butter-flavored olive oil in a small nonstick skillet over medium-low to medium heat.
  2. Add the tomato and cook briefly, allowing some of the excess moisture to cook away.
  3. Add the spinach and cook just until wilted.
  4. In a small bowl, whisk together the whole egg and the amount of liquid egg whites equivalent to two eggs.
  5. Pour the egg mixture into the skillet. Cook gently, stirring and folding as the eggs begin to set.
  6. When the eggs are almost finished, fold in the feta and fresh chives. Finish with freshly ground black pepper.
  7. Taste before adding salt. The feta already provides some sodium, so you may find you don’t need any. If you do, just add a pinch.

I recently saw Ina Garten prepare a wonderfully bright Tequila Lime Chicken with fresh citrus, chili powder, and jalapeΓ±os. It inspired me to create an alcohol-free Rosemary Thyme version using orange, lemon, and lime juices with a little chicken broth in place of the tequila.

The citrus makes the chicken fresh and flavorful, while chili powder adds gentle warmth. Tamed jarred jalapeΓ±os provide an optional touch of Tex-Mex flavor without overwhelming heatβ€”and I can simply leave them out of my portion.

Ingredients

4 boneless, skinless chicken breasts
Β½ cup unsalted or low-sodium chicken broth
β…“ cup freshly squeezed orange juice
ΒΌ cup freshly squeezed lime juice
2 tablespoons freshly squeezed lemon juice
2 tablespoons olive oil
1 tablespoon honey or agave
2 teaspoons chili powder
1 teaspoon smoked paprika
Β½ teaspoon ground cumin
Β½ teaspoon garlic powder, optional
ΒΌ teaspoon freshly ground black pepper
1 to 2 tablespoons finely chopped tamed jarred jalapeΓ±os, drained and rinsed, optional
ΒΌ teaspoon salt, optional
Fresh cilantro or parsley and citrus wedges, for serving

Directions

  1. Place the chicken breasts between two pieces of parchment paper and gently pound the thicker portions until the breasts are an even thickness.
  2. In a medium bowl, whisk together the chicken broth, orange juice, lime juice, lemon juice, olive oil, honey, chili powder, smoked paprika, cumin, garlic powder, black pepper, jalapeΓ±os, and optional salt.
  3. Reserve about ΒΌ cup of the clean marinade for brushing or serving. Refrigerate it separately.
  4. Place the chicken in a shallow covered container or resealable food-storage bag. Pour the remaining marinade over the chicken and turn the pieces until evenly coated.
  5. Refrigerate for 4 to 8 hours. The chicken may be prepared the evening before, but avoid marinating it much longer than 8 hours because the citrus can begin to change the chicken’s texture.
  6. Remove the chicken from the refrigerator about 20 minutes before grilling. Discard the marinade that held the raw chicken.
  7. Preheat the grill to medium-high heat and lightly oil the grates. Grill the chicken for approximately 5 to 7 minutes per side, depending on thickness, until it reaches an internal temperature of 165Β°F.
  8. Allow the chicken to rest for 5 minutes. Brush lightly with the reserved clean marinade, if desired, and garnish with fresh cilantro or parsley and citrus wedges.

This cheerful citrus chicken would be delicious with brown rice, grilled corn, black beans, or a crisp garden salad. Any leftovers can be sliced for tacos, wraps, or salads the following day.

When I was growing up, my grandmother had a cellar.

That cellar represented something much bigger than food.

It represented love that planned ahead.

Today, most of us don’t have root cellars.

Instead, we have refrigerators, freezers, pantries, and vacuum sealers. We freeze berries instead of drying them. We label packages with the date. We buy meat when it’s on sale and tuck it away for another day. We keep a few extra vegetables on hand because we know life gets busy.

Recently, I realized that my own basement has become my modern cellar.

It isn’t filled with mason jars lined up on wooden shelves. Instead, it’s home to freezers with carefully organized meats, frozen vegetables, berries from the grocery store, pizza crusts waiting for family pizza night, and ingredients that help our home run a little more smoothly.

The tools have changed.

The purpose has not.

There is something deeply comforting about knowing your home is preparedβ€”not out of fear, but out of love.

I love their naturally buttery flavor, and leaving the peels on adds wonderful texture, color, and goodness to every bite. Sometimes the simplest recipes are the ones that bring us back to the table again and again.

Ingredients

  • 2 pounds small red potatoes, scrubbed well, skins left on

  • ¼–⅓ cup warmed 1% or 2% milk
  • 1 teaspoon Rosemary Thyme Seasoning Blend
  • Β½ teaspoon freshly ground black pepper, or to taste
  • 1–2 tablespoons fresh parsley, chopped
  • Salt, if desired, to taste

Directions

  1. Wash the potatoes well and cut any larger potatoes into halves or quarters.
  2. Place in a large pot and cover with cold water by about an inch.
  3. Bring to a boil and cook for 15–20 minutes, or until fork tender.
  4. Drain well and return the potatoes to the warm pot for about one minute to allow excess moisture to evaporate.
