Lemon Mint Sun Tea

🍋🌿 Summer Sips

Lemon Mint Sun Tea

💛 QUESTION OF THE DAY:

What’s your favorite summertime drink that instantly reminds you of home?

There are some recipes that don’t need fancy ingredients or complicated steps. They simply capture the feeling of summer.

For me, one of those is Lemon Mint Sun Tea.

I have always loved making sun tea. There is something wonderfully peaceful about placing a glass jar outside on a warm afternoon and letting the sunshine do the work. As the tea slowly brews, the fresh lemon brightens every sip while the mint adds a cool garden-fresh flavor that makes this one of my favorite summer drinks.

It’s simple.

It’s refreshing.

And it tastes like sunshine in a glass.

Whether you’re sitting on the porch, working in the garden, or sharing a meal with family, this tea is a beautiful reminder that some of life’s greatest pleasures really are the simplest ones.

🍋 Lemon Mint Sun Tea

Makes: 1 gallon

Ingredients

* 1 gallon cold filtered water

* 8 regular black tea bags (or 6 family-size tea bags)

* 1 large lemon, thinly sliced

* 8–10 fresh mint sprigs

* Ice for serving

* Optional: Honey to taste when serving

Directions

1. Fill a clean one-gallon glass jar with cold filtered water.

2. Add the tea bags.

3. Gently bruise the mint leaves with your fingers to release their natural oils, then add the mint and lemon slices to the jar.

4. Cover the jar with a lid and place it outside in full sunshine for about 2½ to 3 hours on a warm day.

5. Bring the tea indoors, remove the tea bags, lemon slices, and mint.

6. Refrigerate until well chilled.

7. Serve over ice with a fresh slice of lemon and a sprig of mint.

🌿 Rosemary Thyme Tip

For the freshest flavor, pick the mint just before brewing. Spearmint gives the tea a gentle sweetness, while peppermint creates a cooler, more refreshing finish.

🍓🌿 Strawberry Basil Margarita Mocktail

Fresh strawberries, fragrant basil, a squeeze of lime, and sparkling strawberry flavor make this such a refreshing summer drink. It has all the fun of a pretty patio margarita—without the alcohol and without loading it up with sugar.

Sometimes the simplest summer ingredients make the prettiest drinks at the Rosemary Thyme Table. 🍓🌿

Strawberry Basil Margarita Mocktail

Makes 2

Ingredients

  • 4–5 fresh strawberries, hulled
  • 4–5 fresh basil leaves, plus more for garnish
  • Juice of 1 lime
  • 1 teaspoon honey or preferred sweetener, optional
  • 1 bottle Strawberry Sparkling ICE, chilled
  • Ice
  • Lime wedges and fresh strawberries, for garnish

For the rim, optional

  • Lime wedge
  • A little coarse salt or a salt-and-Swerve mixture

Directions

  1. Add the strawberries, basil leaves, and lime juice to a small glass or measuring cup. Gently muddle until the strawberries release their juices and the basil becomes fragrant.
  2. Taste and add a little honey or sweetener only if the strawberries need it.
  3. If desired, rub a lime wedge around the rims of two glasses and dip them lightly into the rim mixture.
  4. Fill the glasses with ice.
  5. Divide the strawberry-basil mixture between the glasses.
  6. Slowly pour chilled Strawberry Sparkling ICE over each and gently stir.
  7. Garnish with a fresh strawberry, lime wedge, and small sprig of basil.

🌿 Rosemary Thyme Tip: For an extra-pretty summer glass, slice a strawberry and a few basil leaves and tuck them among the ice before adding the sparkling drink.
