Mediterranean Breakfast Pizza

🌿 Mediterranean Breakfast Pizza on a Cauliflower Crust

💛 QUESTION OF THE DAY:

What is your favorite breakfast to enjoy on a slow weekend morning?

For me, there’s something special about gathering outside while the morning is still cool, hearing the birds, and letting breakfast cook on the grill. We usually think of pizza as a dinner meal, but I think it deserves a place at the breakfast table too.

This Mediterranean Breakfast Pizza begins with a cauliflower crust, making it a lighter way to enjoy all the flavors we love. A creamy layer of whipped cottage cheese, plenty of fresh spinach, sweet tomatoes, roasted red peppers, fluffy scrambled eggs, mozzarella, and tangy feta come together with fresh rosemary and oregano for a breakfast that’s both satisfying and full of garden-inspired flavor.

One little trick I really like is scrambling the eggs before adding them to the pizza. It makes grilling much easier, gives you egg in every bite, and creates a beautiful finished pizza that’s simple enough for anyone to make.

Whether you’re enjoying a quiet morning on the patio or serving brunch with family, this is one of those recipes that feels just a little bit special without being difficult.

🌿 Mediterranean Breakfast Pizza

Ingredients

* 1 cauliflower pizza crust

* 1 teaspoon extra virgin olive oil

* ¼ cup whipped cottage cheese (or light ricotta)

* ½ cup shredded part-skim mozzarella

* ¼ cup crumbled feta cheese

* 1 cup fresh baby spinach

* ½ cup grape tomatoes, halved

* ¼ cup roasted red peppers, sliced

* 2 tablespoons sliced green onions (green parts only)

* 1 teaspoon chopped fresh rosemary

* 1 teaspoon chopped fresh oregano (or ½ teaspoon dried)

* Freshly ground black pepper

* 4 large eggs, softly scrambled

* Fresh parsley or basil

* Lemon zest

* Extra virgin olive oil for finishing

Directions

1. Preheat your Char-Broil grill to about 400°F.

2. Softly scramble the eggs and set aside.

3. Brush the cauliflower crust lightly with olive oil and grill for 4–5 minutes to crisp.

4. Spread the whipped cottage cheese over the crust.

5. Add the mozzarella, spinach, tomatoes, roasted red peppers, and scrambled eggs.

6. Sprinkle with feta, rosemary, oregano, and green onions.

7. Grill for another 6–8 minutes until the cheese is melted and the crust is crisp.

8. Finish with fresh herbs, a little lemon zest, cracked black pepper, and a light drizzle of olive oil.

It’s a delicious way to bring Mediterranean flavors to your breakfast table while keeping things fresh, colorful, and easy.

May your home be filled with simple meals, peaceful mornings, and the people you love.

Have a peaceful and blessed day.

Greek Yogurt Berry Crumble

🌿 Greek Yogurt Berry Crumble

A Cozy Summer Dessert That’s Lighter, But Still Delicious

💛 QUESTION OF THE DAY:

What is your favorite berry dessert to enjoy during the summer?

One of the biggest misconceptions about eating healthier is that dessert has to disappear from the menu.

I don’t believe that’s true.

I think dessert can still have a place at the table when we prepare it thoughtfully.

Sweet summer berries are naturally delicious and don’t need much added sweetener. Instead of a traditional flour topping, this crumble is made with almond flour and crunchy walnuts for wonderful flavor and texture. Then it’s finished with a cool spoonful of Vanilla Greek Yogurt Cream, lightly sweetened with just a touch of honey.

It’s the kind of dessert that satisfies your sweet tooth while using wholesome ingredients you can feel good about serving.

This is exactly the kind of simple farmhouse dessert I love sharing around the table.

🌿 Greek Yogurt Berry Crumble

Serves 6

Berry Filling

* 4 cups mixed berries (blueberries, strawberries, raspberries, or blackberries)

* 1 tablespoon fresh lemon juice

* 1 teaspoon lemon zest

* 2–3 tablespoons Swerve Granulated

* 1 tablespoon cornstarch (optional, for a thicker filling)

Almond Walnut Crumble

* 1 cup almond flour

* ½ cup chopped walnuts or pecans

* 2 tablespoons sliced almonds (optional)

* 2 tablespoons Swerve Brown

* ½ teaspoon cinnamon

* Pinch of salt

* 3 tablespoons melted butter

Vanilla Greek Yogurt Cream

* 1 cup nonfat plain Greek yogurt

* ¼ teaspoon pure vanilla extract

* 1–2 teaspoons honey

    (or 1 teaspoon Swerve Confectioners for an even lower-sugar option)

Directions

1. Preheat oven to 350°F.

2. Toss the berries with the lemon juice, lemon zest, Swerve, and cornstarch if using. Spread into an 8-inch baking dish.

3. In another bowl, combine the almond flour, walnuts, sliced almonds, Swerve Brown, cinnamon, and salt. Stir in the melted butter until crumbly.

4. Sprinkle the crumble evenly over the berries.

5. Bake for 30–35 minutes, until the berries are bubbling and the topping is lightly golden.

6. While the crumble bakes, stir together the Greek yogurt, vanilla, and honey until smooth. Refrigerate until ready to serve.

7. Let the crumble cool for about 10 minutes before serving.

8. Spoon into bowls and top each serving with a generous dollop of the Vanilla Greek Yogurt Cream.

🌿 Farmhouse Tip

Fresh lemon zest brightens the berries and lets their natural sweetness shine. The cool Vanilla Greek Yogurt Cream adds a rich, creamy finish with extra protein, making this dessert feel wonderfully indulgent while staying light.

I hope this recipe reminds you that healthy eating doesn’t mean giving up the foods you love. Sometimes it’s simply about making thoughtful choices and letting good ingredients speak for themselves.

There will always be room at my table for dessert… especially when it’s made with love and shared with family and friends.

Have a peaceful and blessed day. 💛

Mediterranean Carrot and Chickpea Salad

🥕 MEDITERRANEAN CARROT & CHICKPEA SALAD

💛 QUESTION OF THE DAY:

What’s one ingredient you’ve accidentally bought too much of and then had to get creative using?

For some reason, I managed to overbuy carrots during the past couple of weeks.

Every time I opened the refrigerator, there they were… another bag of carrots waiting to be used.

I suppose we’ve all done that from time to time.

Rather than letting good food go to waste, I decided to make this a “Carrot Week” in my kitchen and create a few new recipes centered around one simple ingredient.

I’ve never been one to let food go bad if I can help it.

Sometimes the best recipes come from looking at what we already have and asking, “What can I make with this?”

That’s exactly how this Mediterranean Carrot & Chickpea Salad came to be.

Sweet shredded carrots, hearty chickpeas, crisp cucumber, fresh parsley, creamy feta, and a bright lemon herb dressing come together for a salad that’s colorful, satisfying, and full of fresh Mediterranean flavor.

It’s delicious as a light lunch, a side dish, or paired with grilled chicken for an easy supper.

Sometimes a simple bag of carrots is all the inspiration we need.

🥕 Mediterranean Carrot & Chickpea Salad

Ingredients

• 4 cups shredded carrots (about 5–6 large carrots)

• 1 (15-ounce) can chickpeas, drained and rinsed

• 1 English cucumber, diced

• ½ cup crumbled feta cheese

• ¼ cup chopped fresh parsley

• ¼ cup chopped fresh mint (optional)

• ¼ cup toasted walnuts or sliced almonds (optional)

Lemon Herb Dressing

• 3 tablespoons extra virgin olive oil

• 2 tablespoons fresh lemon juice

• 1 teaspoon lemon zest

• 1 teaspoon Dijon mustard

• 1 teaspoon honey

• ½ teaspoon dried oregano

• ¼ teaspoon garlic powder

• ¼ teaspoon black pepper

• Pinch of sea salt (optional)

Directions

Combine the carrots, chickpeas, cucumber, parsley, mint, and walnuts in a large bowl.

Whisk together all of the dressing ingredients until smooth. Pour over the salad and toss gently to coat.

Fold in the feta cheese and refrigerate for about 20 minutes before serving.

🌿 Rosemary Thyme Tips

• Add grilled lemon herb chicken for a complete meal.

• Serve over baby spinach for extra greens.

• Stir in cooked brown rice or quinoa to make it even more filling.

• It tastes even better after a few hours in the refrigerator.

Thank you for spending a little time in my farmhouse kitchen today. I hope this recipe inspires you to look through your own refrigerator and turn something simple into something delicious.

Have a peaceful and blessed day.

Why We Still Eat Together

🕯️ PEACE AT THE TABLE

Why We Still Eat Together

💛 QUESTION OF THE DAY:

What is one meal from your childhood that you still remember because of the people who were sitting around the table?

There are so many things today competing for our attention.

The television is on. Phones are buzzing. Schedules are full. Sometimes everyone eats at a different time, in a different room, or on the way to the next activity.

Life has become busy.

And yet…

Dennis and I still try to sit down together whenever we can.

Not because our meals are perfect.

Not because every dinner is homemade.

Not because we have something fancy to serve.

We do it because there is something quietly meaningful about sharing a table.

It is often during those simple meals that we talk about our day, laugh over something that happened, make plans for tomorrow, or simply enjoy a few peaceful moments together before life becomes busy again.

The meal itself is soon forgotten.

The conversation often isn’t.

Long after the recipes have faded from memory, we remember who sat beside us.

A family table doesn’t have to be fancy.

It can be soup in simple bowls.

A grilled cheese sandwich on a rainy afternoon.

Breakfast on a Saturday morning.

Or leftovers after a long day.

The table has never been about impressing anyone.

It’s about making room for one another.

The table is still worth setting… whether it’s for a house full of family, a dear friend, a table for two, or a quiet meal for one. Every place at the table has value because every person matters.

Perhaps that’s one of the reasons I started Rosemary Thyme.

Yes, I love sharing recipes.

But even more than recipes, I hope to encourage something that feels increasingly rare…

A peaceful home.

A welcoming kitchen.

And a table where people know they belong.

Thank you for inviting me to your table each day. Whether you’re cooking for a large family, your spouse, a dear friend, or simply preparing a quiet meal for yourself, I hope you never forget that those moments matter.

Wherever you gather today, I hope you’ll find a few quiet moments of peace.

Wishing you a peaceful and blessed day.

Creamy Rosemary & White Bean Carrot Soup

Creamy Rosemary & White Bean Carrot Soup

💛 QUESTION OF THE DAY:

Have you ever found yourself with more of one ingredient than you planned? What delicious ways have you found to use it?🥕

This week at Rosemary Thyme has become a little “Carrot Week!”

After sharing my Mediterranean Carrot & Chickpea Salad, I still had plenty of carrots waiting in the refrigerator. Rather than letting them go to waste, I started thinking about one of my favorite kinds of meals…a warm pot of homemade soup.

There’s something so comforting about taking a few simple ingredients from the pantry and refrigerator and turning them into something nourishing for the people we love. This soup is creamy without heavy cream, hearty from butter beans, and filled with the fresh aroma of rosemary and thyme. It’s the kind of meal that’s perfect with a slice of crusty bread and a quiet evening at home.

I hope it inspires you to use what you already have in your kitchen and discover just how wonderful simple ingredients can be.

Servings: 6

Ingredients

* 2 tablespoons extra virgin olive oil

* 1 medium onion, diced

* 2 celery stalks, diced

* 2 pounds carrots, peeled and sliced

* 2 (15-ounce) cans no-salt-added butter beans or cannellini beans, drained and rinsed

* 4 cups unsalted or low-sodium chicken broth

* 1 teaspoon chopped fresh rosemary (or ½ teaspoon dried)

* 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)

* 1 bay leaf

* ½ teaspoon black pepper

* Salt to taste, if needed

* ½ cup plain nonfat Greek yogurt, plus more for serving (optional)

* 1 tablespoon fresh lemon juice

Directions

1. Heat the olive oil in a large Dutch oven over medium heat. Add the onion and celery and cook for about 5–6 minutes until softened.

2. Stir in the carrots and cook for another 3 minutes.

3. Add the butter beans, chicken broth, rosemary, thyme, bay leaf, and black pepper.

4. Bring to a gentle boil, then reduce the heat and simmer for 25–30 minutes, or until the carrots are very tender.

5. Remove the bay leaf.

6. Blend the soup until smooth using an immersion blender, or carefully blend in batches.

7. Stir in the Greek yogurt and fresh lemon juice until well combined.

8. Taste and adjust the seasoning if needed.

9. Serve with an extra dollop of Greek yogurt, a sprinkle of fresh rosemary or thyme, and warm whole-grain bread.

🌿 Rosemary Thyme Kitchen Note

Butter beans create an incredibly creamy texture while adding protein and fiber. This soup also freezes beautifully, making it a wonderful meal to prepare ahead for busy days.

May your home be filled with the comforting aroma of homemade soup, grateful hearts around your table, and the simple joy of making something wonderful from what you already have.

Mediterranean Tomato Cod Skillet

🐟🌿 Mediterranean Tomato Cod Skillet

A simple Mediterranean supper filled with garden herbs and fresh summer flavor.

💛 QUESTION OF THE DAY:

Do you grow any herbs in your garden? Which one do you reach for most often in your cooking?

One of my favorite parts of summer is stepping outside with a little basket and clipping fresh herbs just before dinner. Tonight, my lemon balm was thriving while many of my other herbs needed a little extra care. It reminded me that sometimes the simplest gifts from the garden become the most unexpected blessings.

If you’ve only used lemon balm for tea, give it a try in savory cooking. Its gentle lemon fragrance pairs beautifully with fish, tomatoes, olive oil, and fresh basil. It adds just a whisper of bright citrus that makes this Mediterranean-inspired skillet feel wonderfully fresh.

This is one of those meals that’s elegant enough for company, yet simple enough for a quiet weeknight at home.

🌿 Mediterranean Tomato Cod Skillet

Ingredients

• 2 cod fillets (5–6 ounces each)

• 2 tablespoons extra-virgin olive oil

• ½ small onion, finely diced

• 3 cloves garlic, minced

• 2 cups chopped fresh tomatoes (or one 14-ounce can no-salt diced tomatoes)

• ¼ cup sliced Kalamata olives

• 1 tablespoon capers, rinsed

• ½ teaspoon dried oregano

• ¼ teaspoon dried thyme

• Salt and freshly ground black pepper, to taste

• Zest of ½ lemon

• Juice of ½ lemon

• Fresh basil

• Fresh parsley

• 1 tablespoon finely sliced fresh lemon balm

• Lemon wedges for serving

Directions

1. Heat the olive oil in a cast-iron skillet over medium heat.

2. Cook the onion until softened, about 5 minutes.

3. Stir in the garlic and cook for 30 seconds.

4. Add the tomatoes, olives, capers, oregano, thyme, and lemon zest. Simmer for 10–15 minutes until slightly thickened.

5. Season the cod with salt and pepper and nestle the fillets into the sauce.

6. Cover and cook gently for 8–12 minutes, or until the fish flakes easily with a fork.

7. Stir together the basil, parsley, and fresh lemon balm. Sprinkle over the fish just before serving.

8. Finish with a squeeze of fresh lemon juice and serve with brown rice, quinoa, or a slice of hearty whole-grain bread.

🌿 Garden Tip: If you grow lemon balm, don’t save it just for tea. Its delicate lemon flavor is wonderful with fish and summer tomatoes and adds a fresh touch to Mediterranean cooking.

May your table always be filled with simple meals, peaceful conversations, and grateful hearts.

Have a peaceful and blessed day.

The Gift Of Simple Meals

🌿 Peace at the Table

The Gift of Simple Meals

There are some meals I can barely remember.

And then there are the ones that never leave you.

Not because they were expensive or elaborate, but because they were prepared by hands that loved you.

My mother wasn’t a gourmet cook. She didn’t fill the table with complicated recipes or fancy ingredients. Most of what she prepared would probably be called “simple comfort food” today.

But she had a gift.

She could take a few potatoes, a roast, fresh green beans from the garden, or a skillet of fried chicken and somehow make it feel like a feast.

The table was set.

The food was hot.

Everyone had enough.

And somehow, in those ordinary meals, we learned something extraordinary.

We learned that love doesn’t always arrive with grand gestures.

Sometimes it comes in a warm bowl of soup.

A slice of homemade bread.

A skillet of potatoes.

Or a dessert that someone took the time to make simply because they wanted to see you smile.

As I’ve grown older, I’ve come to appreciate those meals even more.

Perhaps we’ve complicated cooking a little too much.

We search for the newest ingredients, the latest trends, and recipes with pages of instructions, forgetting that some of the most memorable meals are also the simplest.

Fresh vegetables.

Good bread.

A piece of fish.

A pot of soup.

Food prepared with care.

When we cook with gratitude, even an ordinary supper becomes something sacred.

Tomorrow evening, someone may not remember every ingredient you used.

But they will remember how your home felt.

How your kitchen smelled.

How welcomed they were at your table.

And maybe that’s the greatest recipe of all.

May your home always be a place where simple meals become beautiful memories.

“Better is a dinner of herbs where love is than a fattened ox with hatred.”

— Proverbs 15:17

Have a peaceful and blessed day.

Did your family have a meal that faithfully appeared on the table every week? I’d love to hear about the traditions you grew up with!

Growing up in my family, every Saturday night was burger night.

It didn’t matter what season it was or what kind of week we’d had—we always gathered around the table for hamburgers. During the summer, we’d decide which fresh salads or garden vegetables would go with them, and somehow those simple meals became some of my favorite memories.

I never outgrew that Saturday night burger tradition. It found its way to my own family table, and now I enjoy giving those classic burgers a fresh Mediterranean twist with bright lemon, fragrant herbs, creamy feta, and plenty of fresh vegetables.

Lemon Mint Sun Tea

🍋🌿 Summer Sips

Lemon Mint Sun Tea

💛 QUESTION OF THE DAY:

What’s your favorite summertime drink that instantly reminds you of home?

There are some recipes that don’t need fancy ingredients or complicated steps. They simply capture the feeling of summer.

For me, one of those is Lemon Mint Sun Tea.

I have always loved making sun tea. There is something wonderfully peaceful about placing a glass jar outside on a warm afternoon and letting the sunshine do the work. As the tea slowly brews, the fresh lemon brightens every sip while the mint adds a cool garden-fresh flavor that makes this one of my favorite summer drinks.

It’s simple.

It’s refreshing.

And it tastes like sunshine in a glass.

Whether you’re sitting on the porch, working in the garden, or sharing a meal with family, this tea is a beautiful reminder that some of life’s greatest pleasures really are the simplest ones.

🍋 Lemon Mint Sun Tea

Makes: 1 gallon

Ingredients

* 1 gallon cold filtered water

* 8 regular black tea bags (or 6 family-size tea bags)

* 1 large lemon, thinly sliced

* 8–10 fresh mint sprigs

* Ice for serving

* Optional: Honey to taste when serving

Directions

1. Fill a clean one-gallon glass jar with cold filtered water.

2. Add the tea bags.

3. Gently bruise the mint leaves with your fingers to release their natural oils, then add the mint and lemon slices to the jar.

4. Cover the jar with a lid and place it outside in full sunshine for about 2½ to 3 hours on a warm day.

5. Bring the tea indoors, remove the tea bags, lemon slices, and mint.

6. Refrigerate until well chilled.

7. Serve over ice with a fresh slice of lemon and a sprig of mint.

🌿 Rosemary Thyme Tip

For the freshest flavor, pick the mint just before brewing. Spearmint gives the tea a gentle sweetness, while peppermint creates a cooler, more refreshing finish.

May your day be filled with warm sunshine, quiet moments, and something refreshing to sip while you enjoy the beauty of home.

The Modern Cellar

🕯️ Piece at the Table

The Modern Cellar

When I was growing up, my grandmother had a cellar.

It wasn’t decorated. It wasn’t meant to impress anyone. It was simply a cool place beneath the house where food was stored with care. Shelves held jars of vegetables and fruit. Potatoes, onions, and other staples rested quietly, waiting to become family meals.

That cellar represented something much bigger than food.

It represented love that planned ahead.

Today, most of us don’t have root cellars.

Instead, we have refrigerators, freezers, pantries, and vacuum sealers. We freeze berries instead of drying them. We label packages with the date. We buy meat when it’s on sale and tuck it away for another day. We keep a few extra vegetables on hand because we know life gets busy.

Recently, I realized that my own basement has become my modern cellar.

It isn’t filled with mason jars lined up on wooden shelves. Instead, it’s home to freezers with carefully organized meats, frozen vegetables, berries from the grocery store, pizza crusts waiting for family pizza night, and ingredients that help our home run a little more smoothly.

The tools have changed.

The purpose has not.

There is something deeply comforting about knowing your home is prepared—not out of fear, but out of love.

Every loaf of bread in the freezer…

Every package of soup tucked away…

Every bag of frozen blueberries…

Every meal planned ahead…

They’re all quiet reminders that home isn’t built in a single day. It’s built one thoughtful decision at a time.

Our grandparents understood that.

Perhaps we’ve never really stopped doing what they taught us.

We’ve simply traded the cellar for the freezer.

As I stood in my basement recently, I smiled.

For the first time, I realized I wasn’t looking at extra refrigerators and freezers.

I was looking at my grandmother’s cellar… just updated for a new generation.

May we never lose the quiet wisdom of preparing our homes with love, sharing what we have generously, and remembering that the heart of every pantry, cellar, and freezer is the same.

It is simply another way of saying,

“There’s always room at our table.”

Have a peaceful and blessed day, my friends.
